When Irish Eyes Are Smiling

Great Aunt Joan’s Irish Soda Bread Recipe

– 4 cups white flour
– 1 cup sugar
– 1 tsp salt
– 2 Tbsp caraway seeds
– 1 tsp baking powder
– 1 tsp baking soda
– 1 1/2 cups raisins
– 2 eggs
– 1 stick melted margarine
– 2 cups buttermilk

Mix dry ingredients (flour, sugar, salt, seeds, powder, soda, raisins) for 5 MINUTES
Add wet ingredients (eggs, margarine, buttermilk); mix 10 MINUTES
Pour mixture into greased loaf pan. Bake at 350 degrees for 1 1/4 hours.


I decided to make a loaf after several Guinesses at the Moan and Dove.  The bread came out wonderfully, but I somehow failed to notice dropping two hair elastics in the oven while checking on the loaf’s progress.  Keith retrieved them five minutes later when I noticed a plastic-y odor and disaster was averted.
